Sicilian lemon, and nothing else. The only ingredient in this bottle is food-grade lemon essential oil from Sicily, so what you taste is fresh, bright citrus with a clean, sharp edge rather than a candied or confected lemon note.
An essential oil carries no water, so it goes exactly where water-based lemon flavourings cannot - tempered chocolate. Ganache, patisserie and ice cream all contain fat and water together and will take either this oil or a water-soluble lemon instead.
How to Use Lemon Flavour Drop, Oil Soluble
Add it drop by drop and taste as you go - the push-control dropper under the cap doses a single drop at a time. Work it through tempered couverture for lemon thins and shells, stir it into ganache or a patisserie cream, or finish an ice cream base with a drop or two. Keep the bottle tightly closed, in a dry place at room temperature, away from direct sunlight.
