What Is Mexican Single Origin Chocolate? Mexican single origin chocolate is couverture made with cocoa grown in Mexico, which is as close to the beginning of the story as chocolate gets. Cacao was first domesticated in Mesoamerica, and the word cacao itself traces back to the Mixe-Zoque language of the Olmec. Most Mexican cocoa now grows in Tabasco, which produces around eighty per cent of the national crop, with Chiapas second.
