Grandes Distilleries Peureux brings together the spirits and fruit eaux-de-vie of one of France's most celebrated distilling houses in a portfolio created specifically for patisserie, chocolaterie, catering and the wider food industry.
Founded in 1864 in Fougerolles, the historic heart of French fruit distilling in the foothills of the Vosges, Peureux has spent more than 150 years perfecting the art of the eau-de-vie. Still family-run today, the house draws on four historic nineteenth-century distilleries and a reputation that reaches from its regional cherry orchards to Michelin-starred kitchens around the world. It is the home of the celebrated Griottines; small wild Morello cherries macerated and steeped in Kirsch, and of Kirsch AOC de Fougerolles, the protected cherry brandy that made the region famous. That same long-held expertise sits behind every bottle in the range.
The Keylink selection focuses on the spirits a professional kitchen reaches for most: Marc de Champagne for soaking, glazing and ganache; Label 5 and Glen Turner Pure Malt Scotch whiskies for rich, warming flavour in caramels, truffles and bakes; and a concentrated Limoncello for a bright citrus lift. Each is bottled at professional strength, 60 to 70% vol, far above the retail equivalents.
That higher strength is the point. With a greater percentage of alcohol and a more intense flavour and aroma than supermarket bottles, these spirits deliver their character even in tiny amounts, so you can flavour a buttercream, a syrup or a chocolate filling without turning the finished product into an alcoholic one. It does more than carry flavour, too: because a concentrated spirit holds far less water than a liqueur and water is the enemy of chocolate and the friend of bacteria using up to 1.2% culinary alcohol in a recipe lowers water activity and helps extend shelf life, keeping fillings and ganaches at their best for weeks or even months after production, with no need to label the finished product as alcoholic. A little goes a long way, the flavour comes through clean and true, and a single bottle stretches across a great deal of production.
