Our Brazilian single origin chocolate comes from Valrhona and is made from cocoa beans grown in southern Bahia; part of the Mata Atlântica, the vast and ancient South American biome that stretches along Brazil's coast into Argentina and Paraguay. The forest encompasses a huge number of ecosystems and is home to thousands of species of plants and animals, including Lion Tamarins and Muriquis (woolly spider monkeys).
The Atlantic Forest once covered 350 million acres, but today is fragmented by major cities like Sâo Paolo and Rio de Janeiro (roughly 70% of Brazil's population lives in the region), as well as agriculture such as sugarcane, coffee and cacao plantations.
For over 20 years, Valrhona's commitment to biodiversity and sustainable development has seen them invest in the tropical forest, partnering with a family run plantation, M. Libânio Agrícola S.A. The plantation has been Rainforest Alliance certified since 2013 and uses a traditional agroforestry system specific to northeast Brazil known as cabruca, where cocoa trees are planted under the shade of banana and palm trees.
Valrhona's Brazilian couverture, Macaé, is named after a river that flows through the middle of the Serra do Mar, a rock formation in southeast Brazil. With deep notes of black tea and roasted nuts, Macaé is a deliciously dark chocolate with a flavour that evoques the history of the terroir.
