Fine cocoa mass from Colombia...
Made from Colombian Fino de Aroma cocoa beans (known as fine flavour, only the top 7-8% of the world's cocoa is given this title by the International Cocoa Organisation), this cocoa mass has a beautiful flavour profile and is ideal for use in desserts, especially where pinpoint accuracy on sugar content is required.
Why use cocoa mass drops?
Cocoa mass drops provide extra control over your dessert creation and sweetness level, as the mass is the liquor (fermented, de-shelled and roasted cocoa beans grinded into a liquid) in a hardened form, which makes adding a small amount much easier than working with cocoa liquor.
Can you use cocoa mass to create a 100% dark chocolate?
Yes, you can temper cocoa mass in the same way as dark chocolate. The crystallisation curve for Luker Cocoa Mass is 45-50°, down to 27° then back up tp 30-32° for working temperature.

- FREE next business day delivery by DPD or APC on all orders over £150 (ex. VAT).
- Orders placed before 3pm Mon-Fri will be dispatched the same day for delivery the next business day.
- From September to December, orders placed after 3pm on Friday but before 10am on Sunday will also be delivered on the Monday, excluding palletised orders.
- Delivery on orders under £150 (ex. VAT) is £8 plus VAT. No minimum order requirement.
- Orders including personalised items, to-order products or card cut to size are unlikely to be dispatched the same day, but will be dispatched as soon as possible.
