Alfajores

Ingredients

  • Plain Flour - 200g
  • Corn Flour - 300g
  • Baking powder - 2 teaspoons
  • Butter - 250g
  • Caster Sugar - 130g
  • Lemongrass Spice Drops - 3 drops
  • Pumpkin Spice Drops - 10 drops
  • 3 Egg Yolks
  • 60% XO Brandy - 2 Teaspoons
  • Vanilla Extract - 1 Teaspoon
  • Dulce De Leche - 250g

Method

​​​A buttery biscuit sandwiched together with Dulce de Leche, this traditional South American recipe melts in the mouth and can be easily added to your Christmas creations with a simple spice drop addition and some decorations! Now that's what we call a feliz navidad!

 

How to Make Alfajores Sandwich Biscuits:

 

  1. Combine your flour, corn flour, baking powder and a pinch of salt, and set to one side in a bowl.  
  2. Add the butter and sugar to your stand mixer and set to speed 4. As this begins to turn pale, add your egg yolks, Lemongrass and Pumpkin Spices spice drops, brandy and vanilla extract
  3. One combined, begin adding your dry ingredients, in thirds, allowing them to fully mix with your wet ingredients each time.  
  4. When all your ingredients are fully mixed, a semi-crumbly dough should have formed.  
  5. Lay out a silicon or PVC sheet, gently roll your dough into a large ball with your hands, then place onto the center of the sheet, adding another guitar sheet on top of this. 
  6. Press your dough down gently between the sheets and begin rolling out into a rough square shape, about 3-4mm thick.  
  7. Let this rest in the fridge for at least an hour.  
  8. Before removing, set your oven to 160°c (fan assisted) or gas mark 4.  
  9. Once set, you should be able to hold the dough in the centre without the sides drooping. Begin cutting out your Alfajores with a circle cutter and set onto a baking sheet lined tray. 
  10. Bake for 8 minutes. 
  11. Once baked, remove from the oven and leave to set on a cooling rack. 
  12. Once cool, pipe slightly warmed dulce de leche onto one biscuit and close with another biscuit. 
  13. Decorate however you like! We love our alfajores half dipped in tempered chocolate and covered in Crispearls! But a light dusting of icing sugar is delicious too.
