It earns its place next to the pods on speed and consistency: there is no steeping and no scraping, the flavour is the same bottle to bottle, and one 1kg bottle flavours around ten litres of mix.

How to Use Vanilla Flavour Compound

Stir in at 80 to 100g per litre of mix, and mix well before use. That dose suits ice cream and gelato bases, creme patissiere, custards, buttercream, ganache and panna cotta. Add it to the liquid phase and taste as you go - it is a concentrate, so a little past the guide dose goes a long way. Store the bottle tightly closed at room temperature, away from direct sunlight.
