Simple but effective, transfer sheets allow you to add an eye-catching design to your chocolates and desserts without the need for hand painting or airbrushing.

Applications for Transfer Sheets

Transfer sheets are perfect for adding a little extra wow factor to chocolate products, such as bonbon shells, bars, bark and lollipops. But they’re also great for decorating cakes, traybakes and desserts. Either create chocolate decorations such as buttons and shards to top cakes and cupcakes, or add a layer of tempered chocolate or compound coating to the top of your traybakes and lay the transfer sheet on top until set.

Transfer sheets can be used on most fat-based ingredients — try it on Tintoretto or a mixture of spread and compound coating! And for products such as marzipan, simply spray or brush a layer of tempered cocoa butter over the surface first.

How to Use Transfer Sheets

For bonbons and bars: Lay the transfer sheet on top of the tempered chocolate, rough side down, when capping off and scrape along the mould to disperse. Once the chocolate has set, peel off the sheet and turn out your bonbons for a selection of beautifully decorated chocolates.

For shards, buttons and lollipops: Lay the transfer sheet on your counter, rough side up, and pour or pipe tempered chocolate directly onto the sheet. Slide a palette knife between the countertop and the sheet, beneath your chocolate to spread your buttons and lollipops neatly. Pop a lolly stick into the chocolate from the centre, if required. Once the chocolate has set, peel off the sheet and pop your creations into a clear satchel bag.
