Made from Sorrento oranges and labelled by MSK as a natural flavour, this is the orange to reach for when the citrus needs to taste of the fruit rather than of a sweet shop. One bottle, one ingredient list, and a bright orange character that holds its own against dark chocolate.

Being an oil, it carries where water-based flavourings cannot. Tempered chocolate holds no water at all, so this bottle is the one for orange tablets and hollow figures; ganache, bakes, marinades and sauces contain both fat and water and will take either this oil or a water-soluble alternative.

How to Use Sorrento Orange Essential Oil 

MSK recommend 0.7-1g per kg, so start light and taste as you build - the push-control dropper doses a single drop at a time. Work it into tempered couverture for orange thins and bars, stir it through ganache or fondant, or finish a marinade or sauce with a drop or two for savoury work. Keep the bottle tightly closed, in a dry place at room temperature, away from direct sunlight and other strong-smelling ingredients - this oil will pick up stray odours as readily as it gives off its own.
