Lemon oil makes up 60% of each bottle, the larger share of the blend, alongside a plant-derived base which disperses it through water and fat alike. Because there is no juice to add, the drops bring citrus to a buttercream, a ganache or a shortbread dough without loosening it, which fresh juice would.

How Many Drops of Lemon Spice Drops?

Two drops for every lemon a recipe asks you to zest is the working ratio. Mix them into cake batters and biscuit doughs with the wet ingredients, beat them into icing and buttercream at the end, or stir them through a ganache as it cools. To make a lemon cream, beat eight drops into 250g of mascarpone with 60g of icing sugar, then serve it with warm cake or poached fruit. A drop or two also brightens a smoothie or a jug of juice.
