Roxy & Rich's Natural Collection puts ten shades of coloured cocoa butter on the chocolate bench, from Yellow and Fuchsia Red to Midnight Blue and Polar Bear White. Each one is deodorised pure cocoa butter carrying a fat-dispersible food colouring, so the colour travels in the fat itself. Every shade comes in a 59ml (2fl oz) bottle, about 56g, or a 236ml (8fl oz) bottle, about 225g.

What Is Coloured Cocoa Butter?

Coloured cocoa butter is how a chocolatier puts colour into the shell of a moulded chocolate or onto its surface. Because the base is cocoa butter, it belongs in fat-based work: Roxy & Rich make it for moulded chocolates and airbrushing. The colours in this range come from curcuma, annatto, beetroot, red cabbage, spirulina and caramel, with iron oxide for Black and calcium carbonate for Polar Bear White. None of the ten shades contains E171 (titanium dioxide), an azo colour or carmine, and all ten are Kosher certified.

How to Use Coloured Cocoa Butter

Warm the bottle gently until the cocoa butter is fluid. Then spray it through an airbrush, flick it, brush it into the mould or finger paint it. It goes onto clean moulds before the chocolate, or onto still-wet chocolate for a decorative finish. The look is a classic matt colour, not a pearlescent shine.

Polar Bear White is the most popular shade, with Yellow and Fuchsia Red close behind. Keep every bottle tightly closed, away from light, heat and excess moisture, and use older bottles first.
