According to a study by Innova Market Insights, health and wellbeing ranked fourth in priority, just below family, happiness and freedom, with 29% of respondents saying that wellbeing is one of their most important personal values. And these findings are no surprise to those of us in the confectionery industry. At Callebaut’s Chocolatiers’ Day in October 2025, we heard about the growing trend for adaptogens and nootropics in food and drink, and how chocolate is the perfect pairing. Think lion’s mane, white chocolate and pistachio dragées and chocolate drinks infused with collagen.
With an increasing focus on physical and mental wellness, and the rising popularity of products like matcha, there’s never been a better time to take a bite out of the functional ingredients trend.
Key Functional Trends to Look Out For
