Strawberry & Rhubarb Truffles

Ingredients

  • 53g strawberry purée (SCF0866A)
  • 62g Kerrymaid cream (SCM280)
  • 18g glucose (SCA120)
  • 18g invert sugar (SCA107)
  • 336g Callebaut W2 White Chocolate (SCC1541)
  • 8.8g cocoa butter (SCC1413)
  • 6 drops rhubarb flavour drops (SCF0691)
  • 3g beetroot powder (SCF0790) or ½ tsp
  • White Keylink truffle shells
  • Q.S. Strawberry spray-dried powder

Method

These strawberry and rhubarb ganache truffles offer a soft, fruity centre with a crisp white chocolate coating and a vibrant raspberry powder finish. Filled into ready-made white chocolate shells and finished by hand, they deliver a premium look while keeping production efficient, making them ideal for artisan collections, gifting ranges and seasonal lines.

Strawberry & Rhubarb Ganache Filling

Shells

  • White Keylink truffle shells (63 per tray)

Coating & Finish

  • Tempered Callebaut W2 White Chocolate

  • Strawberry spray-dried powder

Method

  1. Prepare the ganache
    Combine the cream, strawberry purée, glucose and invert sugar in a saucepan and bring to the boil.

  2. Form the emulsion
    Pour the hot mixture over the white chocolate and cocoa butter. Leave for a few minutes, then begin mixing by hand until the chocolate starts to melt.

  3. Blend smooth
    Add the rhubarb flavour drops and beetroot powder. Use a hand blender to emulsify until smooth, glossy and uniform.

  4. Cool for piping
    Allow the ganache to cool to approximately 27°C, keeping it fluid enough to pipe.

  5. Fill and cap
    Pipe the ganache into the white chocolate shells, leaving a small gap at the top. Seal with tempered white chocolate and allow to crystallise fully.

  6. Coat and finish
    Dip or roll the set truffles in tempered white chocolate. Before the chocolate sets, roll immediately in Strawberry spray-dried powder to coat evenly.

  7. Set and store
    Leave to fully crystallise before packing.
