From Trend to Product
For professional bakers and chocolatiers, identifying an emerging trend is only the first step. The real challenge is deciding which flavours are worth investing in, what to pair them with and, ultimately, how to turn them into products customers will want to buy and love.
That’s where we come in.
Over the past few months, our development kitchen has taken the trends explored in Part One and translated them into a collection of festive bakery and chocolate recipes.
We’ve focused on pairing these emerging flavours with complementary ingredients and chocolates to create combinations that work naturally together. From matcha and cherry to yuzu and raspberry, miso and caramel, each recipe demonstrates how global inspiration can be introduced into familiar products and formats for this festive season.
Christmas 2026 Trend Snapshot
- Matcha continues to grow beyond specialist cafés into mainstream bakery and desserts.
- Pistachio remains one of the UK’s strongest premium flavours.
- Japanese and Korean ingredients are becoming increasingly familiar to UK consumers.
- New-stalgia continues to influence festive buying, blending nostalgia with modern flavours.
- Premium gifting and limited-edition seasonal products remain key opportunities.
- Colourful, visually distinctive products continue to perform well across social media.
Finding the Right Flavour Pairings
Every ingredient featured in this collection has earned its place for a reason.
Some, including matcha and pistachio, are already well established across café menus, bakery and premium confectionery, while others, such as yuzu, miso and cherry blossom, are seeing rapid growth as consumer interest in these flavours continues to build.
The key is finding the right balance between new and familiar.
Matcha’s distinctive earthy character can be balanced with fruit, sweetness and creamy white chocolate. Yuzu brings acidity and freshness that works particularly well with berries and chocolate. Miso adds savoury depth to caramel, while pistachio pairs naturally with chocolate, fruits, honey and warming spices.
