Date and Pecan Brittle

Ingredients

  • 800g Caster sugar
  • 250g Water
  • 250g Confectionery Glucose Syrup DE60 (SCA120)
  • 5g Bicarbonate of soda
  • 60g Keylink 100% Roasted Pecan Paste (SCM230)
  • 160g Chopped Dates (SCN304A)
  • 160g Pecan Nut Pieces (SCN256A)
  • 0.6g Fine sea salt

Method

A slab of crunchy brittle made with Keylink 100% Roasted Pecan Paste, with chopped dates and pecan pieces stirred into the hot caramel. Break it into shards and dip in chocolate, or use in a bar for a satisfying, crunchy texture.

How to Make Date & Pecan Brittle:

  • 800g Caster sugar
  • 250g Water

  • 5g Bicarbonate of soda
  • 60g Keylink 100% Roasted Pecan Paste (SCM230)
  • 160g Chopped Dates (SCN304A)
  • 160g Pecan Nut Pieces (SCN256A)
  • 0.6g Fine sea salt

Method

  1. Heat the caster sugar, glucose syrup and water together until golden.
  2. Take the pan off the heat and stir in the dates, pecan pieces, pecan paste and salt.
  3. Add the bicarbonate of soda and stir, then spread the mixture out on a flat baking tin.
  4. Leave to cool fully before breaking into shards.
  5. Dip or enrobe the shards if you like, set them on parchment and leave to set fully before packing. Or break into smaller pieces and use as inclusions in a bar (similar to a Daim bar!).
