Cake Pops

Ingredients

  • 250g caster sugar
  • 250g self raising flour
  • 250g unsalted butter

Soft, fudgy, and made for decorating, these vanilla cake pops are all about joyful baking. Instead of buttercream, this clever method uses warm sponge, mixed into a smooth, rollable dough in your stand mixer. The result? A beautifully dense, truffle-like texture that’s perfect for dipping in compound coating and finishing with your favourite sprinkles or toppings. Whether you’re baking for a special occasion or just because, cake pops are pure, playful fun.

For the cake:

  • 250g caster sugar
  • 250g self raising flour
  • 250g unsalted butter
  • 5 eggs

Method

Bake the cake

  1. Preheat your oven to 170°C (fan) / 190°C (conventional).
  2. Grease and line a medium cake tin.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well between each.
  5. Mix in the vanilla extract and milk.
  6. Gently fold in the sifted flour until just combined.
  7. Pour into your prepared tin and bake for 25–30 minutes or until golden and springy to the touch.
  8. Leave the cake to cool slightly, warm, but not hot is perfect for the next step.

Make the cakepop dough 

  1. Break the warm cake into chunks and add to a stand mixer fitted with a paddle attachment.
  2. Turn on the mixer and let it run until the cake transforms into a smooth, pliable dough, this usually takes a few minutes. It should stick together easily when you press it.

Roll and chill

  1. Roll the dough into balls (roughly walnut-sized) and place them on a lined tray.
  2. Chill in the fridge for 30 minutes.

Dip and decorate

  1. Melt your compound coating gently.
  2. Dip the tip of each cake pop stick into the chocolate, then insert it halfway into each cake ball.
  3. Chill briefly to set the sticks.
  4. Fully dip each cake pop in compound coating, let the excess drip off, then decorate with sprinkles or toppings before the coating sets.
  5. Stand upright to set completely.
