This product is repacked in a facility that handles nuts, peanuts, gluten (Including cereals containing gluten), egg, soya, milk and sulphites.
Almond and chocolate is a match made for the festive counter, from marzipan truffles to a cherry bakewell. Our Amaretto 60% vol is a dark brown spirit drink with the flavour of hazelnut and bitter almond, and with only 0.6g of sugar per 100ml, it adds that almond note without making a filling any sweeter.
Amaretto is one of the culinary alcohols whose flavour is concentrated beyond its strength, so it goes further than its 60% suggests. A recipe written for a drinking amaretto needs only between a third and a half of the amount, which keeps extra water out of your ganache, so the filling stays thick and lasts longer.
Using Amaretto 60%
Add it to a ganache, caramel or cream once it is off the heat and cooling, so less of it evaporates. An amaretto crème takes 2.5%, which is 25ml for every kilo of base; in a ganache, start low and taste as you build the flavour up. It also makes an easy swap for the Cointreau in our Salted Caramel Truffles. The flavourings come partly from nuts, so remember to declare nuts on the label of anything you make with it.
