These products are classed as couvertures but not chocolate, and that’s because they are premium cocoa butter flavoured with real fruit powders, with sugar and a hint of lecithin. This means that the fruit flavour really (really!) comes through, for an intense fruit freshness. Being made of cocoa butter, they can be tempered and used as you would chocolate, and their intensity means they work well as part of a product, such as ganache, or for shelling chocolates.
