Our Colombian range of chocolate couvertures come from Luker Chocolate, a family-owned company that works to educate cacao farmers while cultivating the highest quality Fino de Aroma beans. CasaLuker has been manufacturing cocoa products at origin since 1906 and is now B Corporation certified. Luker harvest the beans and make their chocolate couvertures at source, using undeodorised cocoa butter from the same beans and local sugar, making all of the ingredients fully traceable. This, along with their unique conching method, gives Luker chocolates their distinctive flavours and silky mouthfeel.
Luker's premium quality cacao is also used to produce cocoa butter, cocoa mass, cocoa powder and roasted cacao nibs.
Colombia is home to over 45,000 different species of flora, roughly 20% of the plant species worldwide, including the cocoa tree. It also plays host to an enormous biodiversity of birds, squirrels, monkeys and other animals. All of this diversity gives Colombia cacao the recognisable flavour Luker's couvertures are known and loved for.
Cacao origin, cultivation and post-harvesting fermentation and drying all have an impact on the sensory characteristics of cocoa. Luker's Colombian couvertures are perfect for artisan chocolatiers looking for a unique single origin chocolate that boldly demonstrates the flavours of its terroir.
