In this month’s perusal of the Valrhona cocoa library, we’re taking a peek at the dairy free Amatika range! Specifically, Amatika 46% and Amatika Blanche 35%.

Valrhona’s Amatika range was made with plant-based recipes in mind, with both chocolates being dairy free and Vegan certified! Both are made using almond flour, but even with this addition, they offer a smooth mouthfeel and the incredible workability you’ve come to expect from Valrhona’s couverture.
The subtle almond taste only complements the natural cocoa flavour of the 46% Amatika chocolate and adds nutty undertones to the Amatika Blanche 35%, and in application is easily masked by other, stronger flavours.
While the Amatikas were created for plant-based recipes, this isn’t to say that you can’t utilise the range in your standard chocolate to give undertones of almond in a ganache, whilst still offering a creamy finished chocolate that even non-vegans will love.

Earlier this year, the Barry Callebaut factory in Belgium closed for several months following a salmonella-positive chocolate production lot.
