Ice Cream Texture Ingredients

Stabilisers, emulsifiers and texture ingredients help you control how an ice cream or gelato batch sets, scoops and holds together. This page lists two from Colac, Colac Ice Cream Softener and Colac Glucose-Fructose Syrup, for anyone building or adjusting their own recipe rather than starting from a complete base mix.

What Do Ice Cream Texture Ingredients Do?

They answer the common batch problems: ice cream that sets too hard to scoop, a mix that won't stay smooth and even, or a batch that needs to hold its shape in the counter. A lower melting point gives a softer, more scoopable result, which is the job a softener is named for.

Is There A Simpler Way To Make Gelato?

Yes. The two Colac complete base mixes come ready balanced, needing only water or milk, so they are the easier route if you would rather not balance a recipe yourself. You'll find both on the Gelato Bases page.
