What is a yuzu?

A yuzu is a yellow Japanese citrus fruit. It takes like a mix between a tangy lemon, grapefruit and sweet orange. It also has a naturally floral, herbal aroma. This couverture from Valrhona uses real powdered yuzu juice.

Is Valrhona Yuzu Inspiration a chocolate?

Nearly… but not quite! Chocolate is made with cocoa mass, and this product contains none. Instead it is a very high quality couverture, made with cocoa butter - which is why you can use it in the same way as chocolate, and temper it too. You can use it to add flavour to ganache, chocolate bars, or use it for making chocolate shells. It has plenty of flavour, so a little is all you need! Never used yuzu?
