Sweet and Savoury Uses for Lemongrass 

Work from one drop per stick of lemongrass. On the sweet side, make a lemongrass syrup: boil 75ml of water with 150g of caster sugar for ten minutes, leave it to cool, stir in seven or eight drops and pour it over a warm chocolate cake. For a simple lemongrass tea, put one or two drops into a mug, then add just-boiled water. In savoury dishes, add the drops at the end of cooking; in a ganache, after it has come together. Shake well, and keep the bottle tightly closed in a cool, dry cupboard.
