Powdered food colourings are dry, highly pigmented colours you can brush, dust or blend. Brush them into moulds or onto tempered chocolate that is still wet, or combine them with melted chocolate and cocoa butter to spray bonbon moulds through an airbrush gun, for anything from a subtle shimmer to a serious splash of colour.
Which Powder Should I Use?
Powder Colours give a solid colour in red, orange, yellow, green, blue and white. Creative Powders, including Sparkling Gold, Copper, Bronze, Scarlet, Silver and Pearl Pink, add shimmer and a metallic finish. Hybrid Petal Dust runs from Ultra White and Buttercup through Sage and Chai Tea to Navy Blue and Midnight Black.
What Else Can I Use to Colour Chocolate?
For a ready-made liquid option, try coloured cocoa butters, or mix your own shades with the Power Flower system.
