Papua New Guinea

What is Papua New Guinea chocolate like? Papua New Guinea chocolate is made with cocoa grown across the islands and highlands of Papua New Guinea, with East New Britain among the principal growing provinces. The crop is built on heirloom Trinitario, which German settlers introduced from Samoa in 1889, and it has developed a character of its own in the century and a half since.

Almost all of it comes from smallholders. Small farms account for around ninety eight per cent of the country's cocoa and support more than 151,000 households, so a Papua New Guinean couverture traces back to a great many individual growers rather than to a handful of estates.

Our Papua New Guinean Single Origin Chocolate

We stock Cacao Barry's Papouasie 35%, a creamy milk couverture made from single origin Papua New Guinean beans. It carries a distinctive caramel and hazelnut profile, which is unusual in a milk chocolate at this cocoa percentage and gives you something more characterful than a standard milk couverture without losing the sweetness customers expect.
