Gelato Bases

A gelato base mix is a complete powder containing all the dry ingredients for a batch, so you add water or milk, churn and serve. We list two from Colac, both for scoop ice cream: the Complete Vanilla Base Mix and the Complete Neutral Base Mix, each ready to flavour however you like.

Vanilla Or Neutral Base: Which Should I Choose?

Choose vanilla when you want a classic vanilla scoop, or a base with a flavour already in it to build on. Choose neutral when the flavour should come entirely from what you add, such as a fruit puree, a nut paste or a flavour compound. The vanilla mix takes water or milk; the neutral mix takes whole milk.

How Can I Flavour A Gelato Base?

Blend in a flavour paste, a flavouring mass or a fruit puree to set the flavour and colour, then swirl caramel or nut paste through the churned batch so it shows in the tray.
