Method

This gourmet white chocolate truffle filling by Kessko is a premium quality ingredient that's popular with chocolatiers and chocolate lovers alike! Made from white chocolate, sugar, condensed milk and a little alcohol, it's a versatile filling that can be easily combined with other flavouring products to make your own unique range of white chocolate truffles.

How to Use White Gourmet Truffle Mass:

  1. Warm the truffle mass to 25°C in a microwave.
  2. Stir thoroughly while adding the required quantity of flavouring, such as flavour pastes (approx. 30g per 1kg of mass) or alcohol concentrates.
  3. Add some melted butter or condensed milk for a creamier taste, if desired.
  4. Pipe the mixture into your truffle shell or chocolate cup and allow to set for 2–3 hours, then close and decorate.
  5. OR allow to set for 2–3 hours, then scoop and roll into balls, and decorate with cocoa powder, chopped nuts, desiccated coconut or matcha tea powder!
