White Chocolate Matcha Cookies

Ingredients

  • 220g Soft Brown Sugar
  • 100g Golden Caster Sugar
  • 170g Unsalted Butter (Melted)
  • 1 Tsp Vanilla Essence
  • 1 Medium Egg
  • 1 Egg Yolk
  • 250g Plain Flour
  • 2 Tsps Matcha Powder
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Bicarbonate of Soda
  • 1/2 Tsp Salt
  • 150g Callebaut W2 White Chocolate Callets

Method

Matcha is one trend that doesn't appear to be going anywhere, and we're not mad about it! Whip up a batch of deliciously earthy and sweet white chocolate matcha cookies with this recipe from Callebaut and the Chocolate Academy's Julie Sharp.

How to Make White Chocolate Matcha Cookies:

Makes 8 cookies

  1. Preheat oven to 160°C/140°C Fan/Gas 3. Line a baking sheet with parchment.
  2. In a large bowl, whisk together the brown sugar, caster sugar and melted butter until pale and fluffy.
  3. Beat in the vanilla essence, egg and egg yolk until combined.
  4. Add the flour, matcha powder, bicarbonate of soda, baking powder and salt to the mixture and mix together.
  5. Fold through Callebaut W2 White Chocolate Callets.
  6. Using an ice cream scoop, place balls of cookie dough on to the baking sheet, leaving 5cm between each cookie.
  7. Transfer to the oven and bake for 8-10 minutes or until golden.
  8. Transfer to a wire rack and allow to cool before serving.
