Pistachio Tiramisu

Ingredients

  • 400ml KerryMaid Whipping Cream (SCM280P)
  • 100g Caster Sugar
  • 400g Italian Mascarpone
  • 200g Pistachio Spread 15% (SCM
  • 100g Pure Pistachio Paste
  • 200ml Strong Black Coffee
  • 2 Tbsp Marsala or Coffee Liqueur (Optional)
  • 75ml Amaretto (Optional)
  • 300g Sponge Fingers
  • 25g Whole Pistachios
  • Q.S. Rose Petals

Method

We're enjoying the trend for pistachio flavoured everything, and that includes this deliciously rich and indulgent pistachio tiramisu! Using our Callebaut Pure Pistachio Paste and Keylink Essentials Pistachio Spread 15%, it's a creamy, sweet and nutty take on the classic tiramisu that will put a smile on your customers' faces!

How to Make Pistachio Tiramisu:

  1. Make the coffee and add the Amaretto (if using), set aside to cool while you line a deep 20cm square tin with parchment paper
  2. Whisk the cream and sugar together in a stand mixer until you have stiff peaks (approx. 6-7 minutes), transfer to another bowl
  3. In the stand mixer bowl, combine the pistachio paste, pistachio spread, mascarpone and marsala (if using), whisk on medium until all ingredients are incorporated
  4. Using a rubber spatula, transfer the whipped cream into the mascarpone pistachio mixture and fold in gently until well combined
  5. Dip each side of the sponge fingers briefly into the coffee and Amaretto mixture then arrange in a single layer in the base of the tin
  6. Spoon over a third of the filling, then repeat twice, alternating sponge fingers and filling
  7. Chill for 4-6 hours, or overnight, then transfer to a serving plate and decorate with whole or chopped pistachios and rose petals
