370g Hazelnut praline (SCM153A)
550g Pure roasted hazelnut paste (SCM155A)
436g Milk chocolate Callebaut Power 41 (SCC587)
139g Praline Feuilletine (SCM565)
231g Roasted nibbed hazelnuts (SCN239)

Mix all of the ingredients at 45C and temper to 23C.

Spread out on a framed plate covered with paper.

Cut into sticks of 10 x 2cm

Enrobe the sticks in more tempered Power 41 (SCC587)

Immediately sprinkle whole caramelised almonds on top (SCN242)
