I use Callebaut Origins Arriba and Ecuador to create my chocolate fillings, flavoured bars and moulded shoes. My customers love the creamy, smooth and delicious taste of Arriba and the rich intense flavour, but not too bitter, of Ecuador. I like the fact that the beans come from one specific country and not a mixture from many. I find respectful tempering achieves the best results.
