Ruby Tablet with Matcha Tea

Ingredients

  • 22g Matcha Tea Powder (SCF0459)
  • 80g Whole Pistachios (SCN250A)
  • 923g Callebaut Ruby RB2 Chocolate (SCC1628)

Touching on two of this year's biggest trends this Ruby RB2 chocolate bar with matcha tea and pistachio is a match(a) made in heaven! And an absolute showstopper in your chocolate shop counter. 

How to Make Ruby Tablets with Matcha Tea & Pistachios:

You could use our 100g Chocolate Bar Mould SMP8000 and make 10 bars

  1. Position whole pistachios and matcha tea powder in the bottom of your mould.
  2. Temper your Ruby RB2 chocolate and pour into the mould.
  3. Smooth the back and clean the sides of your mould.
  4. Sprinkle more matcha powder and chopped pistachio pieces onto the wet chocolate.
  5. Leave to crystallise at 16°C for at least 2 hours before unmoulding.
