Stracciatella Gelato

Ingredients

  • 1kg of Colac Neutral White Base (SGC1006P)
  • 3kg Whole Milk
  • Callebaut Dark Chocolate Shavings (SDS882A)

Method

Straccitella, in Italian, means 'little rags'. The famous ice cream was invented in northern Italy and inspired by an egg drop soup of the same name which has a similar appearance. Thankfully, our Stracciatella gelato recipe consists of only three ingredients, milk, complete gelato base mix and dark chocolate shavings, making it a simple and delicious frozen treat that can be customised however you like!

How to Make Stracciatella Gelato: 

  1. Heat the milk (70-85°c) 
  2. Add the Colac neutral gelato base mix and blend for 2+ minutes, allow to cool 
  3. Then churn and as you extract the gelato, crush the dark chocolate shavings layer by layer. Decorate the top with more shavings
