Black Sesame and Yuzu Gelato

Ingredients

  • 3kg Whole Milk
  • 40ml Yuzu Flavour Burst (SCF1268)
  • 80g Toasted Black Sesame Seeds
  • 1kg Colac Neutral White Base (SGC1006P)

Method

Take your taste buds on a trip to East Asia with this black sesame and yuzu ice cream recipe. Combining the sharpness of citrus fruit with the creamy smoothness of gelato and the nutty crunch of black sesame, it's a triple treat that your customers will be excited to try!

How to Make Black Sesame and Yuzu Gelato:

  1. Heat the milk (70-85°c) 
  2. Add the Colac neutral gelato base and blend for 2+ minutes.
  3. Allow to cool, add the Yuzu flavour burst and toasted black sesame seeds and blend again using a stem blender 
  4. Then churn, decorate and store as you would normally
