We are very excited to announce the arrival of a new Premium Candied Fruit range. We’ve partnered with Vilamajo whose dedication to quality ensures we bring you only the best ingredients. Vilamajo guarantee the consistency of taste and quality of their candied orange and lemon products through careful selection of the fruits used; for example, they only use 3 types of Valencia oranges from over 50 varieties grown worldwide. The fruit is harvested between December and February and then preserved before the candying process begins. Fruit is traditionally preserved in two ways; the first is frozen storage which is an expensive process but preserves the full flavour of the fruit. For instance, Vilamajo’s premium candied straight orange strips (SCF800) are made from specially selected oranges with very little ‘pith’ which have been preserved frozen. The end result is a product of unsurpassed quality, ideal for enrobing in chocolate. Frozen storage also means that the product is free from sulphites. The second method is storage in a preservative solution containing sulphites and is commonly used because it is considerably less expensive. It results in fruit which is brighter in colour, just right for decorating cakes, muffins and as an inclusion in chocolate slabs or for enrobing. After preserving, the process of candying the fruit begins. Most of the humidity in the fruit is extracted and replaced with sugar, which permeates the fruit through the application of heat and pressure. This skilled procedure takes between 2 to 3 weeks.
