Around the World - Lime & Chilli Truffle (Mexico)

Ingredients

  • 120g Kerrymaid Whipping Cream Alternative (SCM280P)
  • 140g Dark Chocolate Splitters (SDS865)
  • 2 Drops of Red Chilli Spice Drops (SCF1285)
  • 4g fresh lime zest
  • 280g Dark Sao Thome 70% Chocolate (SCC700)

Method

Travel to Mexico with chocolate truffles made with fiery red chilli! We love the idea of having a Mexican themed dinner and then serving these as your Mexican inspired dessert! You could even pair them with a lime sorbet or lime flavoured gelato. You'll no doubt have a fiesta in your mouth... 

How to Make Lime & Chilli Truffles:

Makes 35-40 Hand Rolled Truffles

  1. Heat the cream with the Red Chilli Spice Drops in the microwave. ⠀
  2. Pour the cream and chilli over the Sao Thome dark chocolate buttons and stir to make the ganache. You may need to pop the mixture in the microwave for 5 seconds if the chocolate hasn't melted. ⠀
  3. Stir in the lime zest and put it in the fridge to set (this may take up to 3 hours).
  4. Once set take out of the fridge, and with a teaspoon take enough ganache to make the required truffle size.
  5. Roll into a circle and coat the truffles in the Milk Chocolate Splitters.
  6. Pop the truffles back in the fridge after rolling to set further. ⠀
