This month, we’re taking a look at the smooth Blond chocolate, Dulcey 35%.

Dulcey 35% was very much a happy accident, when Frédéric Bau once left his white chocolate in the bain-marie during one of his cookery demonstrations! The resulting product had a toasted shortbread aroma with hints of caramelised milk. After eight years of further research and development up to 2012, Dulcey 35% was born!

It’s a surefire crowd pleaser, with its rich moreish profile and refined sweet flavour, so you can be assured any Dulcey 35% recipes will fly off your shelves!

Characteristics: 35% Blond chocolate with a milky profile and toasted shortbread aroma.

Tasting notes: Caramelised milk, with hints of salt and a biscuity finish.
