These high quality polycarbonate moulds can be used for either chocolate or sugar/fondant work, but due to the protective coating they are not suitable for using the same mould for both - you must have one for each application.
If using for sugar/fondant work you must discard the first batch as the protective film will stick to the sugar and is not suitable for consumption. However, after this first time, they can be used consistently for sugar work (but not chocolate). They will withstand temperatures up to 125°c for sugarwork.
