There’s no rule about how much cocoa solid a dark chocolate should have, which is why you’ll find chocolates with everything from 45%, right the way up to 90% cocoa solids. As long as there is no milk or dairy alternative added, a dark chocolate can be as sweet or as bitter and intense as you like!
