100% pure cocoa
Made from roasted beans and ground into a smooth homogeneous liquor, this mass is great for fine tuning or upping the intensity of the cocoa flavour in your creations. It’s also an ideal way to add some colour to your products, however do bear in mind the bitterness this mass can add while doing this.
How to use mass
Mass can either be gently melted until fully liquid and then added to your creation or it can be added to an already melted mixture with the ‘seeding’ process. If you’re intending to add colour but don’t want the natural cocoa flavour to dominate the flavour profile, it’s best to add an equal part of your chosen sweetener for balance. If you are adding for flavour, the natural bitterness can still quickly take over, so it’s best to add small measurements and work your way up from there.

- FREE next business day delivery by DPD on all orders over £150 (ex. VAT)

- Delivery will be on a 2 day service with delivery charged as a percentage of the order value, subject to a minimum delivery charge per order.

- If your order is large enough for a pallet, we may give you a quick call to ask if you’re able to accept them. Pallet Track can make sure pallets are delivered right to your door, but we do understand that not everyone is able to receive them.
- If you would particularly like a pallet delivery, we ask that your orders are in before 11am to guarantee next business day delivery.
