
Ravifruit
Since 1981, Ravifruit has established itself as one of the world’s leading suppliers of frozen and ambient fruits to professionals in the catering sector as well as to industry. Ravifruit’s reputation has been built on their absolute commitment to select only the very best fruits that nature has to offer coupled with a strong culture of innovation. Since 1996, Ravifruit has been a part of the Kerry Group.
As a result, from its beginnings as a specialist in frozen fruit purées, Ravifruit became the first company to create ready-to-use fruit coulis (1988), ambient pasteurised fruit purées (1991), aromatic fruit purées (2003) and is still the only company to offer frozen fruit grains (2005).
To ensure consistency in the taste, texture and colour of its fruit, Ravifruit has a policy of always buying from the same place, unlike some companies that will simply buy the cheapest fruit available from season to season. Most of the fruit is bought locally in the Rhone valley, France’s biggest fruit production area and the buying power of Kerry ensures excellent quality at the best possible price. A contractually imposed set of strict rules imposed on farmers regarding treatment of fruit trees and timing of harvest to guarantee same BRIX (sugar content), pH, ripeness, pesticide residue content, etc
Keylink have been appointed as the exclusive distributor for England and Wales for all Ravifruit products and will be launching the range with Ambient Fruit purées.
Fruit purées
Ambient Fruit purées
Using a carefully monitored flash-pasteurisation process to preserve all the natural fruit characteristics and qualities in the finished product, Ravifruit ambient fruit purées are widely recognised as being of excellent quality and the number one product worldwide.
They contain 90% fruit and 10% sugar and are all 100% natural products with no added colours, flavours or preservatives. They have a shelf life of 12 months from date of manufacture and should ideally be stored below 15°c. Once opened they have a shelf life of 3 days if kept refrigerated.
They are available in 17 flavours in one litre Variopak cartons and have two very important advantages over frozen purées:
- There is no need for lengthy defrosting so you have “instant access” to what you need
- Ambient storage means that you do not have to use up valuable freezer space.

Frozen Fruit purées
As with the ambient purées, all Ravifruit frozen purées are 100% natural with no added flavours, colours or preservatives. They contain either 90% fruit and 10% sugar or 100% fruit. They are available in a range of over 50 flavours and are ideal for making mousses, bavarois, coulis, fruit cocktails, sorbets, ice creams, iced desserts and pastries, fruit jellies, etc.
The standard range is available in 5x1kg, 3x5kg and 20kg packaging and can be stored for up to 2 years at -18°c.

Aromatic purées
These are a gourmet blend of Ravifruit natural fruit purées and aromatic plants, flowers and spices. They are available in 5x1kg packaging and can be stored for up to 2 years at -18°c.

Fruit Grains
These are also frozen fruit purées but in small pieces (grains). Due to the small size of the grains, this innovative and unique “ready-to-use” purée is easy to use and blends in quickly without the need for lengthy defrosting.
They are available in 5x1kg packaging and can be stored for up to 2 years at -18°c.

Frozen Fruit
IQF (Individually Quick-Frozen Fruit)
The Ravifruit IQF fruit range principally comes from the Rhone Valley, the Ardèche, Périgord, other European countries and the Ivory Coast. As with all Ravifruit products, there is a very strict and rigorous selection process to eliminate any overripe, unripe or damaged fruit.
The IQF fruits are available in sealed trays of 500g and bags of 1kg, 2.5kg and 10kg. They can be stored for up to 2 years at -18°c.

Exotic Fruit Salad Mix
This is composed of cubes of mango, papaya, whole grapes, pieces of pineapple and guava and is ideal for making tarts, decorations, crumbles, gratins, fruit salads and more. The fruit salad mix is also available with a light sugar coating on all the fruit pieces which absorbs water when defrosting – this is especially useful for fruit salads.
It is available in 5x1kg bag.

Preparations and Service Products
Fruit Compotées
Created by Christophe Michalak, the 2005 winner of the World Pastry Cup, these compotées are 100% natural and are unrivalled in quality. They are ready-to-use and rich in fruit pieces with a fruit content of 55-75%. They have all the flavour of a lightly stewed fruit and starch is added to make them bakestable.
They are available in 2x2.5kg bags.

“Extra” Frozen Coulis
Ravifruit fruit coulis have been given a makeover; a new look and new flavours for bang-on-trend recipes and decorations.
The coulis are essentially purées with more sugar added and pectin. They are available in squirt bottles (6x500g) and can be stored for up to 2 years at -18°c.

Frozen Pralinés
These nut pastes are made from nuts and sugar and can be used as flavourings or to mix with chocolate. The great advantage of a frozen praliné is that there is no separation of the oil which means that you can scoop out a small quantity unlike with a tub of ambient product where you have to mix it up first.
The pralines are available in cases of 2x2.5 kg tubs and their storage characteristics are shown below:
- 2 years when frozen (-18°c)
- 1 year refrigerated (+4°c / +5°c)
- 6 months from opening (ambient)
- 3 months for the oil to separate when ambient
