Culinary Alcohol Concentrates : Goyard
This family company was founded in 1911 by Jean Goyard. Born in Burgundy to a family of poor peasant-vinegrowers, he was hard-working and ready to seize any opportunity to make a living, and was the first to have the courage to create a craftsman’s distillery in the heart of the Champagne vineyards in Ay, near Epernay. He started with two distilling machines towed behind lorries, ready to distill to order!
The Goyard distillery developed with a fleet of 12 mobile stills working for private users by the 1930s and with the setting up of a permanent workshop in Ay. Over time the distillery diversified and modernised and today it is a privileged partner of Champagne vineyards with a recognised and well respected know-how, especially famous for its Marc de Champagne.
Marc de Champagne is a colourless brandy that is produced by distilling the grape skins, stalks and seeds which are left from the pressing process in the first stages of Champagne production. It is similar to the Italian Grappa but is considered a more sophisticated spirit. This product is commonly used for making chocolate truffles.
